Ingredients
- 1 whole Lightly steamed beets (see note)
- 1-¼ cup Plain kefir (or almond milk)
- 2 tablespoons vanilla protein powder
- 1 cup Frozen cherries
- 3 whole Ice cubes, or more depending on the consistency you want
- 1 teaspoon bee pollen
Preparation
Peel the beet with a paper towel. Add all ingredients except the bee pollen to your blender and blend until smooth. Sprinkle bee pollen on top of the smoothie before serving.
Note: To steam beets, fill the bottom of a steamer with 2 inches of water. While the water comes to a boil, wash the beet, leaving 2 inches of taproot and 1 inch of stem. Cut into wedges; do not peel. Steam, covered, for 15 minutes. The beets are done when you can easily insert a fork on the tip of a knife into the beets. Although some of the colored phytonutrients are lost in the steaming water, plenty of color and nutrients remain in the beetroot. Transfer to a bowl and let cool.
