Whole butternut squash cut in half, seasoned with chili powder and smoked on the grill.

Ingredients
- 1 whole Butternut squash, halved and seeded
- 2 tablespoons Olive oil
- 1 teaspoon Kosher salt
- 1 teaspoon Black pepper
- ½ teaspoon garlic powder
- 1 tbsp brown sugar
- ½ tablespoon Ancho chili powder
Preparation
Prepare the smoker to about 325ºF to 350ºF.
Cut the butternut squash in half lengthwise. Cut crisscrossing diagonal lines into the flesh of the squash.
Combine olive oil, salt, pepper, garlic, brown sugar and chili powder in a mixing bowl. Brush olive oil mixture over each butternut squash half.
Place on smoker and bake until tender, about 90 minutes. If you don’t get the desired sweetness, finish in the oven by roasting for 15-30 minutes at 350ºF. During the last 30 minutes of cooking, add more of the olive oil mixture.
