Vegetarian stew of lentils with mushrooms and tomatoes.

Ingredients
- 2 tablespoons Olive oil
- 2 Finely chopped onions
- 4 cloves minced garlic
- 1 Finely chopped green pepper
- 250 grams Button mushrooms, finely chopped
- 400 grams chopped tomato in tin
- 6 tablespoons Tomato puree
- ¼ cups Fresh basil, coarsely chopped
- 1-½ cup Black Lentils
- 3-½ cups Water
- Salt and pepper to taste
Preparation
Heat the olive oil in a large saucepan and sauté the onions and garlic until translucent and fragrant. Add green pepper and mushrooms and sauté for about 3 minutes, stirring often.
Pour in the chopped tomato, tomato purée and fresh basil; to incorporate. Then add the lentils and water. Bring to a boil then lower the heat to medium-low for the stew to simmer for about 30 minutes, until the lentils are tender and the sauce is quite thick.
Season with salt and pepper to taste and serve with polenta, bread or even on its own!
