Ingredients
- ½ small onion
- 1 tbsp Olive or vegetable oil
- 5 cups Coarsely chopped mushrooms
- 2 cups Vegetables soup
- Salt and pepper to taste
- ⅓ cups Cream
Preparation
Dice then sauté the onion in the oil in a saucepan over low heat until it starts to turn clear, about 5 minutes.
Meanwhile, wash and dry the mushrooms (or spin them in a salad spinner). Chop the mushrooms. Add chopped mushrooms, onions and broth to a saucepan. Cook until mushrooms are tender, about 15 minutes. Add salt and pepper.
Add the cream and remove from the heat. Mix well. That’s it!
