This gluten-free, meat-free side dish couldn’t be easier to make! Use the vegetables that must be eaten if you prefer.

Preparation: 5 minutes

Cook: 20 minutes

Level: Easy

Serves: 8

Ingredients

  • 1 cup quinoa
  • 1-½ cup Broth or broth of meat or vegetables
  • 1 teaspoon Sea salt
  • ½ cups Chopped broccoli
  • 1 Chopped carrot
  • ½ cups Chopped zucchini
  • 2 tablespoons Butter

Preparation

Add quinoa, broth and sea salt to a medium saucepan and bring to a boil. Reduce the heat to a boil and add the broccoli and carrot.

After 7 minutes, add the zucchini and butter. Cook for another 5 minutes (or until the liquid is absorbed).
