This vegan peppermint bark is ready in 15 minutes and only has 6 ingredients! It’s a quick and easy, healthy and paleo-friendly Christmas gift or dessert!
- ½ cups coconut butter
- ½ cups Lightly packed fresh mint, coarsely chopped
- 1 teaspoon Pure peppermint extract
- 2 tablespoons Hot Almond Milk
- 8 ounces, weight Dark chocolate
Place the coconut butter in a microwave-safe bowl and microwave until smooth and creamy. Add the melted coconut butter, chopped mint, and peppermint extract to a small food processor (mine is 3 cup) and blend until the mint is broken down.
With the food processor running, pour in the hot almond milk until the mixture becomes moist and crumbly. Put aside.
Place dark chocolate in a microwave-safe bowl and melt on medium power and in 30-second intervals, stirring between each interval, until smooth and creamy.
Line a baking sheet with parchment paper and pour in the melted chocolate. Spread the chocolate into a rectangle about 11 x 8 1/2 inches. Crumble the mint mixture over the chocolate and lightly press the crumbs into the chocolate, letting some dark chocolate show through.
Refrigerate until firm, about 30 to 60 minutes. Break into pieces and devour.
