Vegan Granola with Nuts and Seeds
- FOR GARNISH :
- ¼ cups Maple syrup
- 2 tablespoons Olive oil
- 1 tbsp Vanilla extract
- FOR THE GRANOLA:
- 1 cup Almonds, crushed
- 1 cup Crushed hazelnuts
- 2 cups Jumbo rolled oats
- 1 cup Pumpkin seeds, crushed
- 1 cup Walnut halves, crushed
- 1 cup Dried cherries
Preheat the oven to 300ºF (150ºC) and prepare a cake tin with parchment paper.
In a small bowl, combine all the filling ingredients. Put aside.
In a large bowl, combine all the granola ingredients, except the dried cherries. Pour the filling over the granola and mix well.
Put baking paper on a baking sheet. Spread the granola on top. Bake for 10 minutes.
Take the granola out of the oven and return it to the large bowl. Stir in the dried cherries and let cool.
It must cool completely before transferring it to a storage container.
Serve with fortified almond milk.
