The perfect alternative to traditional Italian pesto. It’s smooth, creamy, cheesy and absolutely delicious!
- 3 cups Fresh spinach
- 1 cup Fresh basil, plus more for garnish
- 1 clove Garlic
- ⅔ cups chopped almonds
- 2 tablespoons Lemon juice
- 1 teaspoon hemp hearts
- Salt and pepper to taste
- 4 tablespoons Extra virgin olive oil
In a food processor, add spinach, basil, garlic, almonds, lemon juice, hemp hearts, salt and pepper. Blend for about 1 minute, slowly adding a tablespoon of olive oil at a time. Blend until smooth and creamy.
Transfer the mixture to a jar or prepared dish. Garnish with basil leaves.
