Tomato, Basil and Mozzarella Crostini are a quick and easy appetizer to serve at your party.

- 4 Roma tomatoes
- Dried oregano, to taste
- Salt and pepper to taste
- 1 loaf French roll, cut into 12 slices
- 1 package (4 oz size) Fresh mozzarella, sliced
- ¼ cups Fresh basilic
- Balsamic vinegar, for drizzling
Preparation
Take a cookie sheet and line it with aluminum foil or parchment paper. Spray the parchment paper with nonstick spray.
Slice the Roma tomatoes and place them on the cookie sheet. Sprinkle tomatoes with oregano, salt and pepper to taste. Flip the tomato slices and season the other side.
Place skillet in oven until tomatoes are roasted, about 10 to 15 minutes.
Slice the bread diagonally.
Take another cookie sheet and line it with foil or parchment paper and place the bread slices in a single layer. If available, place a wire rack over the cookie sheet so the bottom of the pan can catch the melting mozzarella. Place the dish in the oven until the bread slices are toasted, about 5 minutes.
While the bread is in the oven, cut the mozzarella into slices and place them on the bread slices. Garnish with tomatoes. Return to oven until mozzarella melts, about 5 to 7 minutes.
Add chopped fresh basil and more oregano on top of the bread. Serve once cooled, drizzling with balsamic vinegar before serving.
