- 4 whole Medium Russet Potatoes
- 1 teaspoon Olive oil (or your favorite oil)
Preparation
Remove the cooking grate and preheat the toaster oven to 400ºF. Wash, brush and dry the potatoes.
Using a small steak knife, gently prick each potato 2 or 3 times on each side. Rub each potato with a thin layer of olive oil (about 1/4 teaspoon) and place the potatoes on the rack of the toaster oven. Bake at 400ºF for 45 minutes. The potatoes will be tender and soft when pierced with a fork and the skin will be lightly browned and crispy to the touch.
Cut a zigzag pattern or an “X” down the length of the potato. Place your thumbs on each end of the potato and press inward toward the center. The potato will open (watch out for the steam). Fluff the interior with a fork.
Serve with salt, pepper and your favorite toppings.
Note: Depending on their size, your potatoes may take less or more time. Start checking around 35-40 minutes for small potatoes.
