Ingredients
- 6 Eggs
- Pinch of salt
- 1 tbsp Butter
- 1-¼ cup Chopped broccoli
- ¾ cups Chopped mushrooms
- ½ cups Chopped red pepper
- ¼ cups Milk
- ⅓ cups Grated cheddar cheese
- ⅓ cups Monterey Jack cheese
- ⅓ cups Grated Pepper Jack Cheese
- 1 teaspoon Dill
Preparation
Preheat the oven to 350ºF.
In a medium bowl, beat eggs and salt. Put aside.
Melt the butter in a cast iron skillet over medium heat. Add vegetables and sauté 3 to 4 minutes.
Pour the egg mixture over the vegetables. Gently stir in the cheddar and Monterey Jack cheeses. Gently use the spatula to move the edges and check when the bottom starts to harden. Once the bottom begins to set, carefully place the pan in the oven. Cook for 15 to 20 minutes or until the eggs are completely cooked.
When the eggs are cooked, sprinkle pepper jack cheese on top and melt the cheese in the oven for 1 minute. Remove from oven and sprinkle with dill. Serve hot.
