The perfect eggless omelette for vegans, non-vegans who are out of eggs, or chicken owners whose chickens have decided to take a morning walk. Whatever your situation, this recipe is for you! Oh yeah, and did I mention, it’s even more delicious than the original!

Ingredients
- 1 cup Chick pea flour
- 1 cup Water
- 1 whole Onion, finely chopped
- 4 whole Finely chopped padron peppers
- Oil if needed
- ½ teaspoon garlic powder
- 1 teaspoon baking powder
- ¼ teaspoons Turmeric
- ¼ teaspoons Cumin
- ¼ teaspoons Paprika
- ¼ teaspoons Dried mixed herbs (optional)
- Salt and pepper to taste
Preparation
Soak chickpea flour and water for 4 hours or overnight.
When ready to cook, lightly sauté the onions and peppers in a pan with a little oil until soft. Add to the chickpea paste along with the spices and seasonings. Season to taste with salt and pepper.
Add more oil to the pan and heat until smoking. Drop a small amount of batter into the oil and make sure it sizzles. If so, you’re ready to make the omelette.
Add half of the batter to the skillet and stir. Cook until the bottom is golden brown and comes away easily from the pan. Flip and cook the other side. Repeat with the rest of the dough.
To be enjoyed with a delicious tomato or mango salsa.
