These cookie bars are no joke – butter, chocolate and everything a cookie should be, but in bar form!

Ingredients
- ½ cups Butter, at room temperature
- ⅓ cups brown sugar
- ⅓ cups Cane sugar
- 1 whole Egg
- ¼ cups hazelnut butter
- 1 teaspoon Vanilla extract
- 1-½ cup Whole wheat flour
- ½ teaspoon Baking soda
- ¾ teaspoons baking powder
- 1 teaspoon Sea salt, plus extra for sprinkling
- ½ cups Chopped chocolate bar (I used Square Organics)
- ⅓ cups chopped nuts
- ¼ cups Chocolate chips, for garnish
Preparation
Preheat the oven to 350ºF and grease an 8×8 pan with butter (or oil).
In a large mixing bowl, cream the butter and sugars using a hand or stand mixer on high until smooth and fluffy. Add the egg, nut butter and vanilla, one at a time, and beat again until incorporated. Put aside.
Combine the dry ingredients in a small bowl and stir. Slowly drop spoonfuls of the dry ingredient mixture into the large bowl of butter-sugar-egg mixture. Keep mixing speed low to prevent flour from flying everywhere. Mix until just combined and gently stir in chocolate bar pieces and nuts.
Transfer the batter to the greased pan and press lightly to spread it evenly throughout the pan. Sprinkle with sea salt and chocolate chips and bake for 20-22 minutes, or until golden brown and a toothpick comes out clean.
Cool before slicing. Store in an airtight container at room temperature or in the refrigerator. Enjoy!
