Ingredients
- 2 tablespoons Ground flax seed meal
- 3 tablespoons Filtered water
- 4 ounces, weight High quality dark chocolate, cut into chunks, divided
- ½ cups (Heaping) Natural Creamy Almond Butter
- ½ cups Pitted Medjool dates, soaked in hot water for 20-30 minutes
- 1 teaspoon Vanilla extract
- 2 tablespoons Coconut Flour
- 1 teaspoon Sea salt
- ½ teaspoon Baking soda
Preparation
Preheat the oven to 350ºF and lightly grease a 9×5 baking dish with oil. Put aside.
In a small ramekin, whisk the flaxseed meal and water, and let stand 5 minutes to thicken. This is your flax egg.
Melt 3 ounces of dark chocolate in the microwave in a small microwave-safe bowl. Pour into a powerful blender with almond butter, soaked and drained dates and flax egg. Pulse to combine, then blend for a few seconds or until dates are no longer thick.
Add vanilla extract, coconut flour, sea salt and baking soda. Pulse again to combine.
Transfer the dough to a greased baking dish and top with the remaining dark chocolate chunks. Bake at 350ºF for 20-22 minutes. You may need to perform the toothpick test in a few spots on the brownies to make sure you don’t hit a chunk. When the toothpick comes out with a few crumbs on it, remove the brownies from the oven and let them cool completely (at least 1 hour) before cutting and serving them.
Store leftovers in an airtight container in the refrigerator for up to 2 weeks. Enjoy!
