This Thai cucumber salad is so easy to make and simply delicious!

Ingredients
- 1 Cucumber, peeled into strips
- ¼ Onion, thinly sliced
- 1 Green onion, sliced diagonally
- 6 Cherry tomatoes, cut in half or thirds
- FOR SCREWING:
- 2 teaspoons Sugar
- 2 tablespoons Thai fish sauce
- 2 tablespoons rice vinegar
Preparation
Add all the vegetables to a bowl.
In another bowl, combine the sugar, fish sauce and rice wine vinegar. Add to vegetables and mix well.
To taste! You should be able to taste a mixture of sweet (sugar), salty (fish sauce) and sour (vinegar).
Eat immediately or better yet, let the flavors infuse the vegetables for a few hours in the refrigerator. My preference is to let it marinate for several hours as I think it tastes better that way.
