Crispy golden bites plus breakfast sausages, eggs and spinach equal happiness.

Ingredients
- 43 set toddlers
- 1 whole Shallot, diced
- 2 cups Fresh spinach, chopped
- 6 set Sausage Links
- 7 whole Eggs
- ¼ teaspoons Salt
- ½ teaspoon Pepper
Preparation
Preheat the oven to 400˚F.
Place the bites in the bottom of a pie pan (10 inches in diameter) in an even layer. Bake for 15 minutes.
While toddlers cook, chop the shallot, spinach and sausage. Sauté the shallot and spinach for 3 to 5 minutes over medium-low heat. Turn off the heat and add the sausage. Put aside.
Whisk the eggs in a large bowl. Salt and pepper.
Remove the bites from the oven. Mash the bites with a fork to form a crust.
Spoon vegetables and sausage over crust, arrange in an even layer. Pour the eggs over it.
Bake at 375°F for 20-25 minutes, until center is just set and no longer wobbles. Garnish with avocado and hot sauce if desired.
