Chicken pot pie is a great cold weather comfort meal. But I don’t always have time to make and roll out pie dough. For this chicken tater tot pie casserole, you don’t need pie crust. You get all your favorite chicken pot pie flavors without the work of a pie crust. Tater tots are used instead of dough and are a delicious alternative.

Ingredients
- 2 tablespoons Olive oil
- ½ cups Diced onion
- 1 cup Diced Carrots
- 2 cloves minced garlic
- 2 cans (15 oz format) Cream of chicken soup
- ½ cups Milk
- 1 bag (10 oz size) Frozen Peas
- 1 pound Cooked chicken
- ½ teaspoon Salt
- ¼ teaspoons Ground black pepper
- 1 bag (30 oz. Size) Frozen Tater Tots
- 2 cups Grated cheddar cheese
Preparation
Preheat the oven to 350ºF. Heat the olive oil in a large saucepan over medium heat. Cook the onions, carrots and minced garlic until the vegetables are softened.
Stir in soup, milk, frozen peas and cooked chicken. Cook until heated through. Season with salt and pepper. Pour the mixture into a greased baking dish.
Garnish with frozen potatoes. Bake for 30 minutes. Top with grated cheddar cheese and bake for another 15-20 minutes.
