Grated sweet potato, zucchini and yellow squash are the main players in this super healthy curry-infused vegetable patty. Only 60 calories!

Ingredients
- 1 whole Medium zucchini, grated
- 1 whole Medium yellow squash, grated
- 1 whole Medium sweet potato (5-6 oz size), grated
- 1 whole big egg
- ½ cups Italian seasoned breadcrumbs
- 1 teaspoon garlic powder
- 2 teaspoons Curry powder
- 1 teaspoon Coarse ground salt (more to taste)
Preparation
Place the grated zucchini and squash in a cilantro in the sink or on a paper towel. Using a few paper towels, squeeze as much of the liquid as you can onto the squash. This will prevent your patties from getting too wet and/or falling apart.
Combine zucchini, squash, sweet potato and egg in a mixing bowl. Stir in breadcrumbs and seasonings.
Preheat skillet over medium heat and grease well (I used cooking spray). Scoop out 1/3 cup of the mixture and form a patty with your hands. Gently place on the pan.
Cook for 6-7 minutes or until lightly browned. Gently flip and cook for another 5 to 6 minutes.
Serve immediately. I love topping these with too easy eggs, but they would make a great side dish for almost any meal.
