Super Soft Keto Sugar Cookies are the recipe you need if you’re trying to cut corners but still have that sweet tooth craving. These super soft low carb keto cookies are the perfect treat that even your kids will enjoy!

Preparation: 10 minutes

To cook: 12 minutes

Level: Easy

Serves: 9

Ingredients

  • 1-½ cup Almond powder
  • ¼ teaspoons Baking soda
  • ⅓ cups Low carb powdered sweetener
  • Pinch of salt
  • ½ cups Softened butter
  • 1 teaspoon Vanilla
  • FOR THE GLAZE:
  • ⅓ cups Low carb powdered sweetener
  • ½ teaspoon Vanilla
  • 1 tbsp Heavy cream
  • 2 ounces, weight Softened cream cheese

Preparation

Preheat oven to 350ºF and line a baking sheet with parchment paper or a silicone mat.

Combine almond flour, baking soda, powdered sweetener and salt in a large bowl. Add the butter and vanilla and beat with an electric mixer until combined.

Divide into nine cookies and press down with a damp flat-bottomed cup or measuring cup. Place in the refrigerator for 5 minutes.

Bake at 350°F for 10-12 minutes. The cookies will begin to brown on the bottom when ready.

For the glaze, combine all ingredients in a small bowl and whisk well until smooth. You want the mixture to be fine enough to water in. Add more heavy cream if needed to achieve a good consistency. Drizzle over cookies.

Remarks:
• The low carb sweetener I use for this recipe is Lakanto Powdered Sugar Substitute (use code LOWCARBJ for 20% off).
• I like to use a small ice cream scoop or a 2 tablespoon sized cookie scoop to make sure all the cookies are the same size.
• We moistened the bottom of the cup so the dough wouldn’t stick. You want the bottom of the cup you’re using to be completely flat.
