Ingredients
- 1-½ tbsp coconut oil
- 2 tablespoons Maple syrup
- ½ teaspoon Cinnamon
- 160 grams Oatmeal
- 75 grams raw hazelnuts
- 30 grams Dried goji berries
Preparation
Preheat the oven to 300ºF (150°C). Line a large baking sheet with parchment paper. Put aside.
In a large bowl, mix the coconut oil, maple syrup (or honey) and cinnamon until well blended. Add more maple syrup if you want a sweeter granola – this one is slightly sweet!
Add the rolled oats and chopped hazelnuts to the bowl. Use clean hands to mix well and toss to coat. The mixture will be sticky.
Spread the mixture in a thin layer on a baking sheet. Cook for 20 minutes, stirring halfway through cooking. Once done, add the dried goji berries and mix everything together. Allow to cool completely before transferring to an airtight storage container. Store for up to 2-3 weeks.
