It is perfect for parties. It is ideal for dinner, lunch or a snack. Hey, I even ate it for breakfast. What can I say, I’m obsessed.
- 8 ounces, weight Chopped sun-dried tomatoes
- 15 ounces, weight Drained white beans, Cannellini or Great Northern
- 4 tablespoons Olive oil
- ¼ cups Chopped fresh basil
- ⅛ teaspoons Black pepper
- ⅛ teaspoons Salt
- 3 tablespoons Water
Using a food processor, blend all ingredients on high for 1-2 minutes, until well incorporated. You may need to add salt and pepper to taste.
Serve on your favorite toast, with crackers, over pasta, over rice or as a sandwich spread.
