- FOR FILLING:
- 2 Apples
- 1 teaspoon Cinnamon
- Sweetener, to taste (optional)
- 10 tablespoons Water, divided
- 1 tbsp Cornstarch
- 1 teaspoon Vanilla extract
- FOR THE DOUGH:
- 2 cups Flour
- ⅔ cups Butter
- 1 whole Egg
- 1 teaspoon baking powder
- 4 tablespoons Water
- 1 cup Olive oil, for frying
Preparation
For the filling:
Peel and grate the apples, put them in a mixing bowl. Add cinnamon and sweetener (honey, stevia, agave, or maple syrup), if desired. Don’t use more than 2 scoops even if you have a sweet tooth, apples are quite sweet.
Add water and mix well. Pour into a saucepan and cook over medium heat, stirring occasionally. Combine remaining water and cornstarch and add to apple mixture. Blend until smooth and yellowish. Add the vanilla and stir vigorously. Remove from heat when it comes to a boil. Set aside and prepare the dough.
For the dough:
Measure flour into a mixing bowl.
Place the bowl over a pot of hot water and place the butter in the bowl to soften so it’s easier to work with. (You can also choose to put the bowl with the butter in the microwave over medium heat for about 10 seconds. But be sure to place something on top if you don’t feel like cleaning the microwave later, as the butter may sizzle and splatter. .)
Break the egg and add it to the flour. Add melted butter and baking powder. (If desired, add a spoonful of honey.) Add water and mix well with your fingers until the dough comes together.
Divide the dough into 9 small balls of approximately the same size. Sprinkle a little flour on a work surface and put a ball in the middle. Flatten with a rolling pin into a more or less rectangular shape. Place a spoonful of stuffing in the middle. Fold it in half and push the dough out with your fingers. Make sure you don’t leave any gaps where the filling can escape. Repeat with remaining batter and filling.
Pour oil into a skillet and heat over medium heat. When it starts to sizzle, add the 2 apple turnovers in the oil to fry. In about 20 seconds (or longer, depending on the hotplate), flip to fry the other side. Take them out when both sides are golden brown. Repeat with the remaining slippers.
