These delicious strawberry truffles combine fresh strawberries with cream cheese and white chocolate. They’re made easy with six ingredients using the food processor and microwave.

Ingredients
- 1 cup White chocolate chips, divided
- ⅔ cups strawberries
- 8 ounces, weight Cream cheese, softened
- ¼ cups Granulated sugar
- 1-½ cup Chocolate chips
- 1-½ tsp Coconut oil, divided (optional)
Preparation
Melt 1/2 cup white chocolate chips according to package directions.
In a food processor, combine strawberries, cream cheese, melted white chocolate and powdered sugar. Pulse until smooth and creamy. Pour into a freezer safe bowl, cover and place in the freezer for 2 hours.
Using a small cookie scoop, form 16 balls and place on a cookie sheet lined with waxed paper. Return to freezer for 1 hour.
Roll into thumb-sized balls using your hands. Return to a baking sheet lined with waxed paper and return to the freezer for 1 hour.
Combine chocolate chips and, if desired, 1 teaspoon coconut oil in a small bowl. Microwave for 1 minute at 50% power. Stir and continue in 30 second intervals at 50% power until smooth and creamy. Gently dip the frozen truffles into the melted chocolate. Remove to waxed paper and place in the freezer for 10 minutes.
Melt the remaining white chocolate in the microwave and, if desired, the remaining 1/2 teaspoon coconut oil) at 30 second intervals (50% power) until melted . Sprinkle with truffles. Refrigerate the truffles.
Remarks:
• If you like coconut, dilute the chocolate with just a little coconut oil because it is easier to coat the truffles with the slightly diluted chocolate.
• This recipe has extra cooling time.
