- 1 cup White flour
- 1 cup Whole wheat flour
- ½ cups White sugar
- 1 teaspoon Baking soda
- 2 tablespoons baking powder
- 1 teaspoon Salt
- 1 tbsp Chia seeds
- 1 cup Whole milk
- 4 tablespoons Salted butter
- FOR THE CREAM:
- 1 cup Heavy cream
- 4 tablespoons Cream cheese
- ⅛ teaspoons Vanilla
- ½ cups Granulated sugar
- FOR THE STRAWBERRIES:
- 2 tablespoons Honey
- 2 books Sliced strawberries
Preparation
For the shortcake:
Preheat the oven to 385ºF and grease a 9 x 9 inch baking dish.
Place the flours, half the white sugar, baking soda, baking powder, salt and chia seeds in a blender or food processor and mix lightly. Add the cold butter in ½ inch pieces and pulse a few times.
Add milk in batches and pulse until incorporated.
Spread roughly in a 9 x 9 inch pan with a fork. Sprinkle the remaining half of the granulated sugar on top, this will make it beautifully crispy. Bake for 12 to 15 minutes at 385°F.
While the cake is baking, whip the cream. Add cream cheese, vanilla and powdered sugar and beat. Put aside.
Pour the honey over the strawberries and stir.
Cut squares of hot cake and garnish with cream and strawberries. Savor the taste of an old-fashioned spring!
