This fun, healthy and satisfying meal brings together the flavors of summer in a great way!
- FOR THE GRILLED CHICKEN:
- 2 whole Boneless skinless chicken breasts
- 1 tbsp Olive oil
- Salt and pepper to taste
- FOR SCREWING:
- 4 tablespoons Mayonnaise
- 1 tbsp Dear
- ½ teaspoon Red wine vinegar
- ½ teaspoon poppy seeds
- FOR THE WRAPS:
- 4 whole tortilla wraps
- 1 cup Thinly sliced strawberries
- 1 whole Avocado, thinly sliced
- leaf lettuce
- ¼ cups Thinly sliced red onion
Trim any excess fat from the chicken breast, then coat with olive oil and season with salt and pepper to taste. Grill over direct medium heat until meat is no longer pink and juices run clear.
While the chicken is grilling, whisk dressing ingredients and set aside.
To make the wraps, lightly spread sweet poppy seeds on one side dressing on each envelope. (Note: Pinwheels work best when you buy the biggest, softest tortillas you can find.)
Arrange a thin layer of strawberries, chicken, sliced avocado and lettuce over the wrap. Sprinkle lightly with red onion. Roll up in a wrap, so that the tortilla takes on a cylindrical shape. Cut the wrap into 3/4 inch slices to make a pinwheel shape. Serve immediately.
