Because strawberries and French toast are just meant to be together, I made Strawberry French Toast Clean.

Ingredients
- 4 whole Eggs
- ½ cups Almond milk
- ½ teaspoon Vanilla extract
- ¼ teaspoons Ground cinnamon
- Coconut oil, as needed
- 6 slices Thick whole wheat bread
- 1 cup Pure maple syrup
- 2 cups Fresh strawberries, divided
- 1 tbsp Freshly squeezed lemon juice
Preparation
In a large mixing bowl, combine the eggs, almond milk, vanilla extract and cinnamon and whisk together.
Heat a griddle or large frying pan over medium-high heat with about ½ teaspoon of coconut oil and allow to melt.
Working one slice of bread at a time, dip bread into egg mixture and submerge completely, allowing bread to absorb egg mixture. Once fully covered, remove and allow excess to drip off. Be careful not to let the bread get too soggy as it won’t hold up once transferred.
Transfer the bread to the hot griddle and cook for 2-3 minutes before flipping and cooking the other side for an additional 2-3 minutes, or until both sides are browned and all the eggs are completely cooked through cooked. Repeat with remaining bread slices.
To make Strawberry Maple Syrup, combine pure maple syrup, fresh strawberries and lemon juice in a saucepan and heat over medium-high heat. Bring to a boil, then reduce the heat to medium and simmer for 10 minutes.
In a blender, add hot strawberry mixture and blend until smooth.
To serve, add more fresh strawberries on top of the French toast and drizzle some strawberry maple syrup over the French toast.
