Sweet and creamy homemade treats that are really good for you! These contain only natural sugars, chia seeds and healthy fats from coconut butter. Free of gluten, grains, soy, nuts, dairy or refined sugar!

- 1 cup coconut butter
- 6 Strawberries
- 1 teaspoon Dear
- 1 tbsp Chia seeds
- ¼ teaspoons Sea salt
- ¼ teaspoons Vanilla extract

Line a mini muffin pan with mini cases of unbleached parchment paper.
If the coconut butter is firm, microwave it or soften it in a double boiler until it’s soft and just beginning to melt. Fill each parchment paper with 1/2 tablespoon coconut butter. Level each if necessary. Refrigerate for 30 minutes until the coconut butter is firm.
Dice the strawberries and add them to a small saucepan with the honey over low heat. Once the strawberries start to macerate, add the chia seeds, salt and vanilla. Stir occasionally. As soon as the mixture begins to gel, remove from the heat.
Fill cups with a layer of the strawberry chia mixture and top with a layer of coconut butter, using enough so the strawberry layer is concealed. Refrigerate for at least 30 minutes until cups are solid before enjoying.
