These Strawberry and Cream Rolled Oats are a delicious and healthy new way to enjoy rolled oats!
- 3 cups Almond milk
- 1 cup Whole coconut milk (canned)
- 1-½ cup Bob’s Red Mill Steel Cut Oats
- 2 cups Fresh strawberries, divided
- 2 teaspoons Vanilla extract, divided
- 1 cup Pure maple syrup
- ⅓ cups Plain Greek yogurt
Combine the almond milk with the coconut milk in a large, deep saucepan and bring almost to a boil. (Stir this mixture occasionally to prevent the milk from filming or burning.)
Add the steel cut oats and cook, stirring frequently, for 20 to 25 minutes, until the steel cut oats have almost absorbed all the liquid.
Remove from heat, add 1 cup sliced strawberries and 1 teaspoon vanilla extract, and let sit for 2 minutes. As it rests, it will thicken even more.
For the flavorful syrup, heat the pure maple syrup and 1 cup remaining fresh strawberries, sliced, over medium-high heat until heated through, about 3 to 5 minutes.
Combine yogurt with remaining 1 teaspoon vanilla extract in a small mixing bowl.
To serve, spoon the savory yogurt cream over the strawberries and oat cream and drizzle with warm strawberry maple syrup.
