Quick, easy and elegant summer puff pastry!

Ingredients
- 1 Frozen Puff Pastry Sheet, Thawed, Cut Into 12 Pieces
- 8 ounces, weight Havarti block cheese
- 1 Baby zucchini, thinly sliced lengthwise
- 1 Small summer squash (thinly sliced lengthwise)
- 1 teaspoon fresh oregano leaves
- Salt and pepper
Preparation
Preheat the oven to 400ºF. Grease a 12-cup mini muffin pan with nonstick cooking spray.
Roll out the puff pastry into a square. Cut into 3 inch squares. Cut the block of cheese into 12 small pieces.
Place a square of puff pastry in each mold. Roll up a strip of zucchini with a strip of summer squash and a piece of Havarti sandwiched between and place in the dough. Sprinkle each pie with oregano. Season with salt and pepper.
Place in the oven and bake until the pastry is golden brown, about 15 to 18 minutes. Serve immediately.
