This Spinach, Bacon, and Feta Breakfast Sandwich is an easy-to-make dish that’s packed with fresh ingredients!

- 2 large eggs
- Salt and pepper to taste
- ¼ cups Crumbled feta cheese, divided
- 1 tbsp Olive oil
- 2 cups Fresh baby spinach
- 2 Thin Bagel (or Regular Bagel) Sliced And Toasted
- 4 slices Bacon, Cooked And Drain
Preparation
Preheat the oven to 375ºF. Lightly grease 2 mini pie pans or 2 jumbo muffin pans with nonstick cooking spray.
Crack an egg into each well. Sprinkle with salt and pepper. Whisk lightly to combine. Sprinkle feta cheese over egg mixture.
Bake 8 to 10 minutes or until eggs are set. Remove from the oven and let cool slightly.
While the eggs cook, heat the olive oil in a medium skillet. Add spinach and sauté until softened. Remove from heat and set aside.
To assemble the breakfast sandwiches, divide the spinach evenly among the bagels. Top each bagel with the baked eggs and two strips of bacon.
Serve immediately, refrigerate or freeze until ready to serve. Enjoy!
