Ingredients
- 1-½ pound Small yellow potatoes
- ¾ cups Vegan mayonnaise
- 2 tablespoons Hot sauce of your choice
- 1 tbsp Dijon Mustard
- ¼ cups Diced pickles (pickle cocktail)
- ¼ cups Diced shallot
- ¼ cups Diced green olives
- ¼ cups Diced celery
- ¼ cups Chopped cilantro
- ¼ teaspoons Salt
- ¼ teaspoons Freshly cracked black pepper
Preparation
Fill a large saucepan halfway with cold water and add the potatoes. Cover and place on stove, increasing heat to high. Bring to a boil and boil until potatoes are tender, about 15 minutes. Drain the potatoes, place them in a large bowl and let them cool for about 5 minutes.
Add the remaining ingredients and mix well. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
