Serve this cauliflower “couscous” as a side dish wherever you would normally serve couscous or rice!
- ½ small cauliflower
- 4 tablespoons Butter
- 2 teaspoons Ras El Hanout
- Salt and pepper to taste
- Fresh coriander leaves, to garnish (optional)
- Pine nuts, for garnish (optional)
Process the cauliflower in a food processor until it resembles small grains of couscous.
Melt the butter in a large skillet. Add cauliflower and spices and sauté over medium-high heat until heated through.
Taste and season with plenty of salt and pepper. Serve with cilantro leaves and pine nuts on top (if using).
