Southern green beans are slow-cooked green beans combined with onion, garlic, and crispy bacon. The end result is heavenly with delicious tender green beans that melt in your mouth.
- 4 slices Thick bacon, diced
- 1 Medium onion, finely chopped
- 2 cloves minced garlic
- 2 books Fresh green beans, trimmed
- 3-½ cups Chicken broth
- ½ teaspoon Cajun seasoning
- 2 tablespoons Butter
In a large saucepan over medium heat, cook the bacon until almost completely browned. Add the onion and cook for another 5 minutes. Reduce the heat to low and add the garlic, cook for 30 seconds. Remove the bacon and onion mixture to a bowl. Do not wash the pan.
Add the green beans and enough chicken broth to just cover the green beans. Add Cajun seasoning. Bring to a low boil. Cover and reduce to low heat. Leave to simmer for 1 hour to 1 hour 30 minutes, stirring occasionally.
Drain the chicken broth, return the bacon and onion mixture and heat for 1-2 minutes. Add the butter, stir and serve.
