Delicious sous vide fried chicken.

- Salt and pepper to taste
- 6 pieces Chicken thighs
- FOR THE COATING:
- 1 whole beaten egg
- 1 cup Soy milk
- 2 cups All purpose flour
- 1 tbsp salt
- 1 teaspoon Ground black pepper
Preparation
Start the sous vide machine and heat the water to 155°F.
Sprinkle salt and pepper all over the chicken thighs. Place the seasoned chicken in a resealable bag and seal using the water immersion method. Cook for 3 hours.
In a bowl, mix the egg and milk. In another bowl, combine the flour, salt and pepper.
Once the sous vide bath is complete, remove the chicken from the bag and set it aside.
Preheat skillet over medium-high heat and add oil. Heat the oil to 425ºF.
Coat each chicken in the flour mixture, then dip in the moist mixture. Finally, dip back into the flour mixture. Fry each chicken thigh for 3-4 minutes. Let the chicken rest for 15 minutes before serving.
