Socca is a delicious gluten-free Mediterranean dish that uses chickpea flour. It’s basically a savory pancake that you can add any toppings to!

Preparation: 5 minutes

Cook: 15 minutes

Level: Easy


Update

Ingredients

  • 2-¼ cups Chickpea flour
  • 2 cups Water
  • ⅓ cups Caramelized onions
  • 1-½ tbsp extra virgin olive oil
  • Salt to taste
  • Your desired toppings, such as mashed avocado, fried egg, chopped cilantro, salsa

Preparation

Whisk together chickpea flour, water, caramelized onions, olive oil and salt.

Spray the pan with a little coconut oil and heat over medium-high heat. Pour 1/4 cup of batter into a heated skillet, per socca. Cook 2 to 3 minutes on each side.

Transfer to a plate. Top with any recommended toppings or your own ideas.
