Ingredients
- 8 books Pork Loin
- FOR THE BRINE:
- 2 tablespoons Ground black pepper
- ½ cups Sugar
- ¼ cups Salt
- ½ liter Apple juice
- ½ liter apple cider vinegar
- FOR RUB:
- 1-½ tsp chili powder
- ¼ cups Paprika
- ¼ cups Sugar
- 3 tablespoons Cajun seasoning
- 1 tbsp Salt
Preparation
Combine the brine ingredients and add the pork loin. Refrigerate overnight.
Combine marinade ingredients in a bowl. Remove pork loin from brine and coat with spices. Rest for 1 hour.
Preheat smoker to 250ºF and add wood chips. Place pork loin in smoker and smoke for 3 hours or until internal temperature reaches 180ºF.
