Ingredients
- 8 pieces Chicken thighs
- Olive oil, as needed
- FOR RUB:
- ¼ cups light brown sugar
- 1 teaspoon Ground black pepper
- 1 teaspoon Cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tbsp Salt
- 1 tbsp Paprika
Preparation
Mix all the ingredients for the marinade in a bowl. Brush chicken thighs with olive oil and sprinkle generously with marinade.
Preheat smoker to 250ºF and add wood chips. Place chicken thighs in smoker and smoke for 2 hours or until internal temperature reaches 165°F.
