Ingredients
- 4 Medium sweet potatoes, coarsely chopped with the skin on
- 2 tablespoons Dried basil
- 1 tbsp My dear
- Salt and pepper to taste
Preparation
Add the chopped sweet potatoes to a large pot with water. Make sure the potatoes are covered. Cook over medium-high heat until tender.
Remove 1 cup of starchy water from the pot, then drain the rest. Mash with a potato masher until smooth. Use the starchy water to thin the sweet potatoes if necessary. Add basil, honey, salt and pepper. Serve and enjoy!
