This low carb oatmeal recipe is keto-friendly, vegan, and so easy to make: coconut flour, hemp hearts, flax, coconut milk! Prepare a delicious, nutritious breakfast in just 10 minutes! Goodbye bloating, hello healthy and pleasant morning sensations!

Serves: 2

Ingredients

  • ¼ cups Coconut Flour
  • 2-½ tablespoons Golden flax meal
  • 1 tbsp hemp hearts
  • 1 tbsp Swerve (or other sweetener of choice)
  • 1 teaspoon Cinnamon
  • ⅔ cups Unsweetened coconut milk
  • 1 cup Unsweetened almond milk
  • 2 teaspoons Vanilla extract

Preparation

Add the coconut flour, flax meal, hemp hearts, sweetener and cinnamon to a small saucepan and mix well. Add the coconut milk, almond milk and vanilla extract and mix well so that no lumps remain.

Turn the stove to medium-high heat and stir the oatmeal until it comes to a gentle boil. Reduce heat to simmer and continue stirring until desired consistency is reached, about 2 to 3 minutes.

Turn off the stove, remove the oats from the burner and let sit for 1-2 minutes. This allows the mixture to thicken!

Divide into bowls, garnish with your favorite toppings and enjoy!
