These delicious shrimp and grits will leave you licking your plate and asking for more. Shrimp are pan-fried with Cajun seasoning, red pepper, green onions, crispy bacon and garlic, all on a bed of creamy cheddar grits. This dish comes together quite quickly and is a favorite with family and friends.

- FOR THE GRITS:
- 4 cups Water
- 1 cup Quick grains
- ¼ teaspoons Salt
- 3 tablespoons Butter
- 2 tablespoons Cream
- 1-½ cup Grated sharp cheddar
- FOR THE BACON:
- 6 slices Smoked bacon
- FOR THE SHRIMPS:
- 1 pound Large Shrimp, Peeled And Deveined
- 2 teaspoons Cajun seasoning
- ⅛ teaspoons Ground cayenne pepper
- 1 teaspoon Dried parsley
- 1 tbsp Vegetable oil
- 1 Finely chopped red pepper
- 3 Green onions, chopped
- 3 cloves minced garlic
- ¼ cups Low Sodium Chicken Or Vegetable Broth
Preparation
Bring the water to a boil. Add oats and salt. Cook for 5 to 7 minutes or until tender. Remove from the heat and stir in the butter, cream and cheddar cheese.
In a large skillet over medium heat, cook the bacon until crispy. Place on paper towels to drain, reserving bacon drippings. Coarsely chop the bacon once cooled. Add shrimp to bacon grease over medium heat. Sprinkle with Cajun seasoning, cayenne pepper and parsley. Flip the shrimp after 1 minute and cook for an additional minute. Remove to plate.
Add vegetable oil to skillet over medium heat. Add red pepper and cook until slightly tender, 2 to 3 minutes. Reduce heat to medium-low. Add green onions and garlic and cook for 1 minute. Add the chicken broth to the skillet and stir. Return the shrimp and bacon to the skillet and heat for 1 minute.
Pour the shrimp mixture over the cheesy grits. Serve immediately.
