These Sea Salt Sweet Potato Steak Fries are clean, crispy, flavorful and super easy to make with half the calories on your belt.

- 1 whole Big Sweet Potato
- 2 tablespoons Olive oil
- 1 teaspoon Sea salt
- 1 teaspoon Ground fresh pepper
- 1 teaspoon Coarse crystals of sea salt (optional)
Preparation
Preheat the oven to 425ºF. Spray a large baking sheet (or 2 small baking sheets) with nonstick spray. Put aside.
Scrub the sweet potato well with a vegetable brush to keep the skin on. Using a sharp chef’s knife or a large sharp knife, cut the sweet potato in half, then into quarters and into large steak fries.
Place the sweet potato on the prepared baking sheet. Drizzle the oil evenly over the sweet potato steaks. Sprinkle with sea salt, fresh ground pepper and mix them with your hands.
Arrange the potato steaks in a single layer on the baking sheet without overcrowding. If necessary, use two baking sheets but be sure to leave space between each sweet potato fries or they will come out soggy.
Bake for 15 minutes on the middle rack. Using a fish spatula, flip them over and cook for another 10-12 minutes or until the edges begin to brown.
