- ½ tablespoon Butter, plus more to spread on bread
- 2 slices Bread
- 2 Eggs
- ⅓ cups Feta cheese
- Freshly chopped dill or parsley, to garnish
Spread a thin layer of softened butter on both sides of the bread. Fry the bread over medium heat for about 2 minutes on each side, until a golden crust forms.
Remove the bread from the pan and add 1/2 tablespoon of butter to the pan. Add the eggs and feta cheese and cook, stirring often, for about 3 to 4 minutes, until the eggs are cooked through.
