Super simple breakfast bowl made with lots of protein and veggies.

Ingredients
- ½ pound Ground pork sausage (or your favorite sausage)
- 2 tablespoons Olive oil
- 1 Small onion, diced
- 1 cup Potato, diced
- 4 Eggs, beaten
- Salt and pepper to taste
- 1 Roma tomato, diced
- 1 cup Grated sharp cheddar cheese
Preparation
In a large sauté pan over medium heat, add the sausage. Bake until fully cooked and golden brown, about 10 minutes. Remove sausage from skillet to drain.
Return the pan to the stove and add the olive oil. Add the chopped onions, potatoes and pinch of salt. Feel free to add any other vegetables you might have on hand (mushrooms, peppers, etc.). Sauté until onions are translucent and vegetables are tender, about 5 to 7 minutes.
Move the vegetables to the side of the pan and add the beaten eggs, salt and pepper. Stir the eggs occasionally to make sure they are cooked through. Return the sausages to the skillet and add the tomatoes and cheese. Mix until everything is well combined.
Serve hot and enjoy!
