Delicious chicken curry in sauce full of flavors and on the table in 30 minutes! Perfect for a weeknight meal.
- ¼ teaspoons garlic powder
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 2 teaspoons Curry powder
- 1 tbsp garam masala
- ¼ teaspoons Black pepper
- ½ teaspoon salt
- 1 piece (Size 1 inch) Fresh ginger, grated
- 1 tbsp Olive oil
- 1 Yellow onion, diced
- 2 Chicken breasts, cubed
- 1 Orange (or red) bell pepper, chopped
- 1 box (approx. 13 oz. size) coconut milk
- 1 box (15 oz size) Tomato sauce
- 1 tbsp Tomato Paste
- rice to serve
Mix all the spices in a small bowl (garlic powder, cumin, turmeric, curry powder, garam masala, black pepper, salt and ginger). Put aside.
Heat the oil in a large skillet over medium-high heat. Once hot, add the onion and cook for about 5 minutes or until softened. Add the spices and cook an additional minute, stirring occasionally.
Add the chicken and sauté until almost cooked. Add the bell pepper and cook an additional minute, stirring occasionally.
Stir in coconut milk, tomato sauce and tomato paste and simmer for 10 minutes. Serve over rice.
