Level: Easy
Ingredients
- 1 bag (16 oz size) Mixed nuts (almonds, cashews, cranberries)
- 1 cup Pumpkin seeds (pepitas)
- 1 cup brown sugar
- ⅓ cups Dear
- 1 teaspoon Vanilla extract
- Pinch of salt
- ⅓ cups Chocolate chips
Preparation
Preheat the oven to 350ºF. Line an 8×11 baking sheet or Pyrex glass with parchment paper, leaving extra parchment hanging down the sides for easy removal of bars.
In a large bowl, add the nuts and seeds and stir to combine.
In a small saucepan, add the brown sugar, honey, vanilla extract and a pinch of salt. Stir with a spatula until the sugar is dissolved and the mixture begins to bubble.
Pour the sugar mixture over the nuts, using a wooden spoon, fold to combine. It will quickly become sticky and harder to bend.
Pour the hazelnut mixture into the prepared baking sheet or pyrex and press down and into the corners with the wooden spoon. Bake in the middle of the oven for 20 minutes. Remove from the oven and let cool for about ½ hour.
Melt the chocolate chips in the microwave for 30-35 seconds. Pour the melted chocolate into a small resealable bag or sandwich bag (just in one of the corners). Cut a small piece off the edge or corner of the zipper bag, leaving a small hole to release the melted chocolate. Pour the chocolate over the nut bars, then transfer to the fridge for about ½ hour or so.
Once completely cooled, remove the entire piece by pulling the parchment paper, starting from its longer sides. Place it on a cutting board. Using a long, sharp knife, cut in half lengthwise and each half into 6 bars, 12 bars in total.
