It’s a perfect addition to any holiday dinner party! This mashed parsnip will make you forget about mashed potatoes! It’s also paleo-friendly so everyone can enjoy it.
- 8 For 10 parsnips
- 1 tbsp Garlic ghee
- 1 teaspoon Rosemary
- Salt and pepper
Wash, peel and cut the parsnips into cubes. Fill a saucepan with water, season with salt and bring to a boil. Once the water is boiling, add the parsnips. Check for doneness after 10 minutes using a fork to check. Once tender, drain and use a potato masher or hand mixer to mash until creamy.
Add ghee and seasoning and mix until incorporated. Serve immediately or store in a glass container.
