The bursting flavor of oven-roasted Italian tomatoes with fresh queso fresco and cilantro is a perfect summer side dish!

- 8 Assorted plum tomatoes (red and yellow)
- 1 tbsp Olive oil
- Salt and pepper to taste
- ⅓ cups Queso Fresco
- 2 tablespoons Finely chopped fresh cilantro
Preparation
Preheat your oven to 400ºF.
Cut out the stem and the small dry spot at the bottom of the tomatoes with a tomato knife. Cut in half lengthwise.
Lightly brush a cookie sheet with olive oil. Arrange the tomatoes on the baking sheet with the cut side up. Using a pastry brush, brush the top of each tomato with olive oil. Season with salt and pepper.
Bake at 400°F for 45 minutes to 1 hour, or until most of the juices have cooked on the fruit.
Serve hot with queso fresco and cilantro sprinkled on top.
