- 2 Large sweet potatoes, cubed
- 2 tablespoons Extra virgin olive oil, divided
- 5-½ cups Mushrooms, sliced
- Salt and pepper to taste
Preparation
Preheat the oven to 350ºF. On a large baking sheet, spread the sweet potatoes so that there is room between them. Drizzle with 1 tablespoon of oil.
Bake for 10 minutes and remove the pan from the oven. Add the mushrooms and drizzle with the remaining oil. Season with salt and pepper.
Let the vegetables cook for another 15 minutes, then stir. Bake for an additional 10 minutes or until desired doneness. Let stand a few minutes before transferring to a serving platter.
