Perfect for sharing, this sandwich is loaded with hummus, avocado and lots of veggies.

- 1 Whole grain half baguette (9 inches)
- ½ teaspoon Olive oil
- ½ little avocado
- 1 lemon wedge
- Salt and pepper
- 1 pinch Red pepper flakes (optional)
- ¼ cups Plain hummus
- 1 teaspoon Sriracha sauce
- 1 Large carrot, peeled and cut into matchsticks
- 2 sheets Lacinato Kale, ribs removed and thinly sliced
- ½ cups Fire Roasted Red Peppers Bulk Packed
- ½ Small cucumber, thinly sliced
Preparation
Cut the baguette in half lengthwise and remove the bread from the bottom half, making sure to leave at least 1/4 inch of crust and bread border. Drizzle both sides with olive oil and grill until lightly crispy.
Mash the avocado on the top half of the bread. Squeeze the lemon wedge over the avocado and sprinkle with salt, pepper and red pepper flakes.
Spoon hummus into the bottom half of the bread, spreading it out in an even layer. Squeeze Sriracha sauce over hummus and layer with carrots, kale, red peppers and cucumbers. Cover with the top of the bread, cut in half and enjoy.
