These Maple Cinnamon Roasted Sweet Potatoes are seasoned with great flavors and roasted to perfection until crispy on the outside!
- 3 Large sweet potatoes, peeled and cut into 1 inch cubes
- 2 tablespoons Olive oil
- 2-½ tablespoons Maple syrup
- 2 teaspoons Cinnamon
- Salt and pepper to taste
Preheat the oven to 400ºF. Lightly coat a baking dish with nonstick cooking spray or line it with parchment paper. Put aside.
In a medium bowl, combine olive oil, maple syrup, cinnamon, salt and pepper. Add the potatoes and stir to coat.
Spread the potatoes in an even layer on the prepared dish. Roast for 30-35 minutes or until golden and crispy. Remove from the oven and let cool for 5 minutes.
Serve immediately. Enjoy!
